CHOCOLATE CHIA PUDDING

INGREDIENTS: 

6 Tbsps Chia Seeds

2 Cups rice milk

12-15 pitted dates

1.25 tablespoons raw cacao

1 tsp organic Vanilla Essence

– In a bowl, mix Chia seeds with rice milk. Cover and place in the fridge for an hour.

– Get Chia and rice milk mixture out of the fridge, and place in a blender or food processor.

– Add pitted dates, cacao and organic vanilla essence and blend well for 5 minutes or until all ingredients are blended well together and a nice, thick, pudding – like consistency is achieved.

– Place in small cups or bowls, seal and keep refrigerated.

** You can add a topping to your pudding such as dessiccated coconut, blueberries, crushed nuts or sunflower seeds.

Enjoy for morning or afternoon tea or as a healthy dessert.
